Crayfish Bisque
Bisque d'écrevisse


 

Ingredients  
 
Crayfish Marinextract™ F-7098 100 g
- Reference ACTIV F-7098 Sample
Carrots 100 g
Tomatoes 2 pieces
Tomato concentrate 20 g
Onions 50 g
Shallots 50 g
Butter 90 g
White roux 60 g
Fish fumet 1 liter
Liquid cream 30 g
Cognac/White wine Q.S.
Salt, pepper, garlic and other spices Q.S.
 
Preparation :

Cook vegetable mirepoix (except tomatoes) in butter.
Add half of Crayfish Marinextract™ F-7098 and stir.
Deglaze with white wine/cognac/fish fumet.
Add fresh tomatoes, tomato concentrate and garlic. Boil 20 minutes.
Filter, add the second half of Crayfish Marinextract™ F-7098 and thicken with white roux.
Finish with liquid cream, salt, pepper and spices.
