Cook vegetable mirepoix (except tomatoes) in butter. Add half of Crayfish Marinextract™ F-7098 and stir. Deglaze with white wine/cognac/fish fumet. Add fresh tomatoes, tomato concentrate and garlic. Boil 20 minutes. Filter, add the second half of Crayfish Marinextract™ F-7098 and thicken with white roux. Finish with liquid cream, salt, pepper and spices.
